100% Pinot Noir

Terroir: Clay Limestone, belongs geologically to the Jurassic and Kimmeridgian.
 
A Cold maceration for 3 days, then both fermentations are made with the indigenous flora. Slight pumping over during the maceration phase. Pneumatic pressing then maturing 6 months in stainless steel tanks.

Tasting:
To the eye, a rich color, purple then taking with the age a deeper ruby, until the purple. On the nose, the bouquet opens with a basket of small red and black fruits (strawberry, cherry, blackcurrant, blueberry).
It is a lively wine on the palate, combining freshness and structure. Its supple tannins and fruitiness are perfectly balanced bringing a great sapidity.

Pairing:
Spring wine par excellence, it will perfectly accompany your aperitifs, cold meats and barbecues.
Serve from 12°C to 14°C as a young wine, 14°C to 16°C as a more mature wine.
