Paul Chavy Chablis Premier Cru "Fourchaume" 2023

VINEYARD:
This cuvée comes from the 1er cru climat “Fourchaume” located at the North Est of the village of Chablis.

VINIFICATION :
Manual harvest. Long pneumac pressing then cold setling for 24 hours. Chaptalization if necessary, addition of selected yeasts, aging in 228L french oak barrels from 3 years for 50% and in inox tanks for 50% . The wines remain in barrels on lees for approximately 11 months then are racked into stainless steel vats to remain there for another 7 months in blending. Fining if necessary, light filtra on then bottled after 18 months of total aging.

TASTING:
Well-ripe yellow fruits, aniseed nose, very concentrated, powerful wine, but with a lot of finesse.
