Paolo Scavino Barolo DOCG 2021 shows precision and lift, with classic Nebbiolo aromatics of rose, sour cherry, raspberry and subtle baking spice, layered with hints of blood orange zest and mint. The palate is dry and medium to full in body, driven by vibrant acidity and tightly knit, fine-grained tannins that frame the fruit without heaviness. The finish is long, savory and mineral, echoing red citrus, rosehip and a gentle anise note. Pour into large stemware and serve at 16–18 °C. It can be enjoyed now after a short decant, yet it will gain complexity and texture over the next 8–12 years, especially alongside truffle dishes, roast lamb or aged hard cheeses.
