Vineyards
Very old Rioja Alavesa vineyards in Laguardia and Elvillar at 600 metres above sea level, on soils with a high calcium carbonate content, fine and porous clays with great potential. On the other side, in Rioja Alta, in the Camprovin area, very fine clay-ferrous soils. Yields of around 3,000 kg per hectare.
Vinification
Direct pressing of whole bunches for white grapes and very light pressing for reds. Alcoholic fermentation with native yeasts in open tanks. For the red wine, bleeding takes place for about 12 hours to gently extract the pigmentation without any kind of punching down. Once bleeding is complete, the two wines are blended in equal parts where they will co-ferment together. The wine is then racked into used 600L French oak barrels where fermentation is completed, including malolactic fermentation, and where it will remain for 10 months before being bottled.
