In the glass this is a deep golden, aromatic field blend, fermented on skins for 14 days and matured for an extended period in used oak. The nose suggests resinous spruce tip tones, yellow root vegetables, garden herbs and a twist of citrus peel. The palate is dry, generous and textural with gentle phenolic grip, bright acidity and a long, lightly savory finish. Serve at 14–16 °C in a large white-wine glass. Excellent with richer fish, mushroom dishes and herb-driven cuisine.
