The Terroir
Bandite is a 100% Pinot Noir cuvée made from vines planted in 1988 on a 10-acre plot of land known as ‘Le Grand Chemin’ in Vrigny, a Premier Cru village on the Montagne de Reims. This plot faces east, ideal for catching the morning light, and lies on a hillside with clay-rich soil, offering optimum conditions for an elegant and unique expression of Pinot Noir.
Natural winemaking and ageing
Natural winemaking: Pressing followed by transfer to small casks, spontaneous fermentation with indigenous yeasts from the locality and natural malolactic fermentation.
Ageing: On the lees for 11 months in small barrels. A wine-wood-lees ratio that enhances the wine's complexity and roundness.
Clarification: Natural, without fining or filtration, to preserve the aromatic integrity of the wine before bottling.
Sparkling: Controlled with pressure limited to 4-4.5 atmospheres.
Ageing: 60 months in the Domaine's underground cellars.
Dosage: Zero dosage
Corking: Very high quality cork (double round ‘Fleur de bouchon’).
Rest after disgorging: 6 months, guaranteeing exceptional balance and finesse.
