100% Chardonnay

Grapes from old Chardonnay vines on the chalky soils of Villers-Marmery yield an elegant, plot-specific Champagne, fermented and aged for a year in neutral oak and then at length in bottle on its lees. The 2011 vintage shows lemon blossom, pear and brioche; the palate is dry, with a fine, persistent mousse, saline minerality and precise acidity leading to a long, focused finish. Concentrated yet slender, it is superb with oysters, shellfish and delicate starters.
