The Terroir
100 % Chardonnay from « Les Hauts Partas » in Chouilly, a Grand Cru village located on the Côte des Blancs at 150 m on moderated slopes with a North-East orientation. The soil is composed of campanian chalk.
The vines are 45 years old. A selection of old vines with a density of 8.500 vines stock/hectare certified organic and cultivated with the principles of agroforestry.
A natural winemaking
Traditional Champagne pressing and a short settling to keep consistency and phenolic compounds.
No chaptalization, neither fined nor flirted.
Spontaneous alcoholic fermentation at a low temperature with indigenous yeasts, in 228L oak barrels that give the village its fantastic character.
Natural malolactic fermentation.
Ageing and after
The wine ages in oak barrels during 10 months.
Natural clarification, no fining, no filtration before bottling.
At 4.5 atmospheres, the sparkling process is favoured.
